My spur: story

I have friends with amazing talent. We have this pressing social issue which required some creative new approach. I never would've imagined that our little project went on survive 10 years of making awesome happen, and more so, changed the narrative and lives along the way. Kudos to Lee, Will and the team!

This recipe

It's one of my favourite Malaysian snacks. As a nomad, the easiest snack to remind me of home.

Ingredients

· 0.5 cup all-purpose flour (or based on consistency)

· 1 tsp baking powder

· 1 tbsp brown sugar (optional)

· 1 large egg3 ripe large bananas (mashed)

· Vegetable oil for deep frying

Method

1 · Mash the banana (smoothness to your liking) and add in the flour and baking powder.

2 · Mix well. The consistency should be more just slightly thicker than a pancake mix. So, add water if it's too sticky, or flour if it looks too watery.

3 · Heat up oil.

4 · Scoop up a spoonful of the batter (tablespoon) and drop them into the hot oil - it should look like an imperfect circular shaped golf ball.

5 · Fry until golden brown.
